Berry Buckle
Recipe by: Taste of homes comfort food Diet Cookbook.

Topping:

1/3-C. flour
1/3-C. Brown sugar
1 ½ tsp. cinnamon
3 Tbls soft unsalted butter

In bowl mix flour, sugar, cinnamon, then with a fork cut in butter until it looks like crumbs. Set aside.

Batter:

6 Tbls soft unsalted butter
3/4 –C. sugar
2 eggs
1-1/2 tsp. pure vanilla
2-1/4 C. flour
2 ½ tsp. Baking powder
½ tsp. salt
½ C. fat-free Organic milk

-Bowl 1. Combine sugar and butter mix with an electric mixer until smooth and fluffy. Add in the eggs one at a time mixing well after you add each one. Add vanilla and mix well.

-Bowl 2. Combine flour, baking powder, and salt

-add half the flour into egg mixture mix well with hand mixer then add half the milk and mix well continue until you have combined everything. Place in a small greased casserole dish spread to cover the entire bottom.

Berries:
Use fresh berries.
Wash all berries before using.

In a bowl combined 1 cup blueberries, ½ cup sliced strawberries, ½ cup black berries, ½ cup raspberries sprinkle with 1 Tbls sugar toss well then spread over the top of batter. Afterwards, sprinkle on crumb topping.

Bake at 350* 40 minutes or until knife comes out clean.
