Freezer Jam

I doubled this recipe today. Freezer Jam Strawberry 2 pt. Cut off steams and rinse Crush 2 cups of strawberries with a potato masher Add 1 box of Sure Jell premium fruit pectin Let sit for ½ hour to get thick Stir in 4 cups sugar Cook in microwave for about 5 minutes until sugar dissolves Than place in 4 freezer Jars Place one jar in fridge to use and the rest in freezer when ready for next jar just take it out of the freezer and place in fridge For Raspberries or blackberries do the same but it takes 4 boxes of the berries And change sugar to 7 cups Best to do this at the first part of summer when berries go on sale, also make sure to use the right amount of pectin if you use more berries you need to add more pectin.    Freezer Jam Things you need Berries washed and trimmed Smashed berries 2 box of Pectin added Letting it sit for 30 minutes with pectin adding sugar ready for microwave Finished cook...

Spinach Chicken Pizza -Use your favorite pizza crust or bread dough I use the same dough I make bread and rolls. -Cook and prep all toppings then set them aside Ingredients 1 small Pkg. of frozen spinach (drained and dried) 1 small can of diced black olives (drained) 2 boneless skinless chicken breasts-Cook by boiling breast or season with salt and pepper brown off in a pan with some Safflower oil, then shred the chicken. ½ pound of thick apple smoked bacon fried and crumbled 1 small vine ripen tomato seeded and diced small 1 to 2 cups of my homemade creamy fettuccine Alfredo sauce, or Bertolli Alfredo Sauce 1 Jar of marinated artichoke hearts (drained and diced) 1 Pkg. of original Feta cheese (crumble) 1 small jar of sliced green olives (drained) 3 to 4 cups of a moist mozzarella cheese (grated)               -Spread your yeast dough onto a greased baker’s sheet. -Spread sauce evenly over ...

Chicken Salad Sandwiches 1 to 5 Boneless skinless chicken breast 32 oz Swanson’s chicken broth 26 to 36 red seedless grapes Sliced 3 Celery sticks chopped finally ½ Cup coarsely chopped pecans Salt Pepper ¾ Cup Hellmann’s mayonnaise or more depending on how much chicken you make For bread I like: Oroweat double fiber whole wheat, Oroweat 100% whole wheat, pumpernickel, or croissants. Pound out chicken breast then place the chicken into a pot of boiling broth. When finished cooking toss broth and let the chicken cool, then slice and dice chicken into shreds. Country Fried Steak with White Wine Parmesan Cheese Sauce

After watching my mom cook for years, I basically, knew how to make this kind of dish. So today was the first time I have made a country fried steak I created the recipe today and it turn out very yummy. Country Fried Steak 2 lbs cube beefsteak 1/3-Cup flour Sea Salt Pepper Paprika 2 eggs 2 Tbls Dry white wine 1/4 –Cup Safflower oil Bowl 1. Egg mixture Whisk together eggs, and wine Bowl 2. Seasoned Flour Combined flour, salt, pepper, paprika Step 1. Heat oven to 250* Step 2. In a cast Iron skillet heat oil on medium low until oil starts to bubble. Cook one steak at a time. Step 3. Dip beef into egg and then cover all sides with flour mixture. When oil is hot enough place beef in skillet and cook for 4 minutes (Do not pick beef up let it cook until the timer goes off) turn beef and cook another 4 minutes. Every wonder what to do with left over egg noodles? Well today, I found this recipe in my Taste of Homes Comfort Food Diet cookbook. It was a hit amongst my three girls and it is hard to believe that this low cal recipe was as tasty as it is. Here is there recipe however; I did add some fresh chopped parsley to the top of ours. There recipe book says 290 Cal per serving and it says it feeds 10. Hamburger Casserole 5-Cups uncooked yolk-free noodles 1-1/4 lb 97/3 Hamburger 2 cloves garlic-minced 24oz can tomato sauce ½ tsp. Sugar ½ salt 1/8 pepper 1 pkg (8-oz) reduced-fat cream cheese (I used weight watchers) 1-Cup reduced-fat ricotta cheese (I used fat free cottage cheese) 1/4-Cup fat free sour cream ½ -Cup finally chopped green onion 2/3-Cup shredded reduced-fat cheddar cheese ¼-cup fresh chopped parsley Cook noodles as it says on the package or just used some that you may have left over from another dinner. Just a thought

I hope everyone has found something on here to make for dinner. Cooking is so much fun and can be easy just remember it's never a race take your time read the recipe and go step by step. When I come upon a new recipe I may take a day or two studying it and thinking about the steps I need to take to make the recipe. Once you get the hang of cooking it can be something you look forward to doing every day. Amy

Low fat chicken cordon bleu, 6 to 8 chicken breast pounded out and cut in half 6 to 8 slice of light deli ham 6 to 8 light laughing cow cheese wedge Salt & Pepper to taste --Pound out each chicken breast, cut in half, trim off fat, and then salt and pepper both sides to your liking, set aside chicken while you prepare the ham and cheese. --Spread cheese on each slice of ham and cut in half. --Then lay ham with cheese spread on chicken. --Roll up chicken and stick in toothpicks to hold chicken together. --Place in a glass casserole dish and bake at 350* for 40 to 50 minutes. Let rest for 10 to 15 minutes and enjoy.
