Low fat chicken
cordon bleu,
6 to 8 chicken
breast pounded out and cut in half
6 to 8 slice of light deli ham
6 to 8 light
laughing cow cheese wedge
Salt & Pepper to taste
--Pound out each chicken breast, cut in half, trim off fat,
and then salt and pepper both sides to your liking, set aside chicken while you
prepare the ham and cheese.
--Spread cheese on each slice of ham and cut in half.
--Then lay ham with cheese spread on chicken.
--Roll up chicken and stick in toothpicks to hold chicken
together.
--Place in a glass casserole dish and bake at 350* for 40 to 50 minutes. Let rest for 10 to 15 minutes and enjoy.

Chicken gravy
1 stick of butter
1/2 tsp black pepper
1/8 tsp. poultry seasoning
4 Tbls flour
32oz Swason’s Chicken broth
Melt butter in a pot add pepper and poultry seasoning mix
well then mix in flour. Whisk in broth and bring to a boil on medium heat.
Whisk often so not to burn the bottom and simmer until thick and bubbly.
