Chicken Noodle Soup
over Red Mashed potatoes
3 Large Boneless Skinless Chicken Breast—boil with sea salt
and 2 Tbls olive oil cook until so tender falls apart.
After chicken is cooked
1 Package of Bear Creek Chicken Noodle Soup Start
4 Tbls Herb-Ox chicken bouillon
1 cup frozen peas
1 cup frozen peas
1 cup frozen carrots
1 cup frozen green bean
1 Cup frozen baby Lima beans
2 stick's of celery diced
1 cup frozen green bean
1 Cup frozen baby Lima beans
2 stick's of celery diced
1 small onion chopped finally
10 cups water (you may have to add more)
½ Cup of noodles any kind (optional, I don’t add extra to mine)

In a large pot boil together all ingredients add your cooked chicken if it is not falling apart dice it. Bring to a boil for about 5 to 8 minutes stirring often, than cook on low until potatoes are made.
Red Mashed Potatoes
Scrub up about 12 to 18 red potatoes cut off any dark spots
and dice. You can leave the peals on or trim them off it is up to you. In a
large pot bring water to boil with sea salt and 2 Tbls of olive oil. Boil until
a sharp knife can cut through the potato like butter. When done drain the
potatoes and mash with a potato masher or use an electric hand mixer. Taste
potatoes if still bland add a little more sea salt. Continue mixing and add ¼ cup
of milk, and 3 Tbls of butter. Taste if bland add a little more sea salt. Make
sure potatoes are nice and thick since the broth from the soup will add more liquid.
P.S. You can use chicken stock if you do not wish to have
all the butter and milk.
Putting the dish together
Place 1/3 cup mashed potatoes in a bowl, than scoop out soup
with ½ of cup of soup getting more noodles and veggies place in the center of
potatoes than scoop out a little broth and pour over veggies and potatoes. I
like hot sauce sprinkled on my mine. Enjoy!
