Bacon Wrapped Meatloaf
Bacon Wrapped Meatloaf
2 eggs
2 to 3 cups of homemade breadcrumbs
¾ cup 2% Organic Milk
1 large yellow onion chopped
½ red onion chopped
6 cloves of garlic minced
1 small chunk of ginger minced (about the size of the top part of your thumb)
1 cup Broccoli finely chopped
3 cup White Cheddar Cheese Grated
3 stalks of celery chopped
1 ½ cup grated organic carrots
1 cup fresh mushrooms chopped or two small cans packed in water drain water and blend in a chopper.
¼ cup celery leaves chopped
2 Tbsp Fresh parsley finely chopped (optional)
1 Tbsp basil
Sea Salt - to taste
Pepper - to taste
1 ½ Tbsp Korean red pepper flakes
2 lb 93/7 ground beef
Hickory Smoked Bacon
Grandma Charlotte's Bar-B-Q sauce
Preheat oven to 375*
Before you start cooking:
Cover a wired cookie cooling rack with tinfoil and with a knife punch tiny holes throughout the tinfoil. Once done place it on top of a half baker sheet. Set a side.
Note: I use a 2 cup capacity electric food chopper to chop everything including to make breadcrumbs and minced ginger and garlic.
Note: taste your mixture of salt in the vegetables before adding beef or eggs.
Step 1:
In a large bowl combine, breadcrumbs, onions, garlic, ginger, celery, broccoli, carrots, mushrooms, sea salt, pepper, celery leaves, parsley, Korean red pepper flakes, basil stir and taste.
(You don't want this to be overly salty because you add just a little more salt after the beef is added)
Step 2:
Add eggs. Add one egg at a time, mixing it well into the mixture each time.
Step 3:
Add Beef. With a large spoon mix in the ground beef. Mix it well making sure there are no clumps of beef. Mixing may take a few minutes.
Step 4:
Add Cheese and milk. After you mixed the beef, add in your grated cheese and milk. Again mix well.
Step 5:
With a spoon add the mixture to the tinfoil rack you have already prepared. Using the back of the spoon smooth out the mixture and shape it into a loaf.
Step 6:
Bacon. Once you've shaped the loaf take a slice of bacon and lay it across the loaf. Repeat with another strip of bacon until covered all the way. If the straps of bacon are too long, trim them after you laid your straps. You only need a small amount to tuck under the loaf.
(Note: I like to lay my bacon opposite of each other there is always one side of the bacon that's bigger than the other side so I'll lay the big side on the left then on the next strip of bacon the big side goes on the right and I continue that all the way down the loaf.)
Step 7:
Bar-B-Q sauce. In a small bowl I add just a little water and some of grandma Charlotte's Bar-B-Q sauce to thin it a little. Then pour it evenly over the bacon.
Step 8:
Put in the oven and cook for 1 hour.
Pull out and add more Bar-B-Q sauce this time do not thin it out. Just add it to the top.
Put back in the oven for another 15 to 20 minutes.
Step 9:
Pull from the oven and cut down the middle and then across you should get 12 servings
And enjoy.
