Scalloped Macaroni and Ham


1 ½ Cup dried elbow macaroni
1 Large chopped onion
4 Tablespoons butter
4 Tablespoons all-purpose flour
1 teaspoon snipped fresh basil or 1/4 teaspoon dried basil, crushed (I use extra and crush it more)
1 tsp Salt
½ teaspoon pepper
3 Cups Milk (Best made with whole milk)
2 Cups diced fully cooked ham
2 Cups frozen peas or one bag of frozen peas & carrots (I use frozen peas and carrot mix or broccoli or asparagus)
1 ½ cup 100% whole wheat double fiber soft bread crumbs (ground in a one cup food processor)
½ Stick melted Butter

1. Cook macaroni about 10 minutes or until tender but still firm. Drain well.

2. Meanwhile, for sauce, in a medium saucepan cook onion in the 4 tablespoons of butter until tender but not brown. Stir in flour, basil, Salt, and pepper.
Add milk all at once. Cook and stir until thickened and bubbly. Remove from heat.

3.  Stir in the cooked macaroni, ham, and frozen peas. Transfer mixture to a 1-quart casserole.

Sprinkle breadcrumbs evenly on top and than drizzle ½ Stick of melted butter evenly over breadcrumbs.

4. Bake in a 350 oven about 30 minutes or until bubbly.
