8 boneless skinless chicken breast or thighs
¼ cup Water
1/3 cup melted butter
2 cups (1 box) seasoned stuffing mix (like stove top chicken flavored)
8 slices Swiss cheese (you can use grated I use 1 pound of grated)
1 can cream chicken soup
salt
salt
Pound Chicken breast flat, arrange chicken in a shallow baking dish place one slice of cheese over each piece of chicken. Stir soup and water together, spoon over cheese and chicken, sprinkle a few good shakes of salt on top of soup. Crush the stuffing until it becomes coarse crumbs than sprinkle over top. Evenly drizzle melted butter over the dish. Bake covered at 350* for 50-55 minutes, uncover 20 min prior to finish baking and continue cooking for remaining time. Serve with a nice big green salad.
Alternatively: Take one completely large chicken boil it than peel off skin and DE-bone the chicken. Shred chicken into pieces lay them in bottom of pan, spread grated Swiss cheese on top of chicken, than spread soup and water mixture on top of cheese, sprinkle a few good shakes of salt on top of soup, top soup with stuffing and sprinkle melted butter over stuffing. Bake uncovered for 25 to 30 minutes at 350*.
Buying a whole chicken is cheaper than buying it in the boneless, skinless packages. Also doing it this way the chicken is already cooked so it reduces baking time.
